2019 Perfectionist
Production Notes
68% Syrah, 20% Grenache, 7% Carignan, 5% Mourvèdre
In a beautiful counterpoint to Nemesis, we have Perfectionist. Whole cluster fermentation in concrete followed by 18 months of aging in concrete produced a focused, savory wine, with firm refined tannins. White pepper, cucumber, balsamic reduction, and blueberries are on display today. Over the next ten years expect the development of leather, slow roasted pork, and earth, with a long, elegant tannin structure. Drink before 2026 with a one to two hour decant, or age through 2042.
Pairings: Mint-crusted lamb chop lollipops, steak tartare, chicken piccata, wild mushroom faro risotto.
Perfectionist is a cellar-born blend that plays with whole cluster and varietal co-fermentations. The wine is aged in concrete without oak influence to showcase the purity of the fruits flavor and to isolate the whole cluster tannin structure.
