Linne Calodo Estate Olive Oil comes from trees planted all around our two properties here in the Willow Creek District of Paso Robles.  The oil is both fruity and round, with a peppery kick at the finish thanks to the blend of varietals of olives we are working with. 

Our four Tuscan varietals - Frantoio, Leccino, Maurino and Pendolino - are commonly found to have pepper and grassy notes.

Our French variety, Picholine, produces a small delicate olive with rich round notes.

 From Spain we grow the Arbequina olives, which is commonly found in large olive farms and adds a delicate mild flavor.  

Finally, we have the Mission variety, brought over by the missionaries along with the first grapevines.  These olives make an oil that is full bodied and buttery.
