2019 Perfectionist Magnum

In a beautiful counterpoint to Nemesis, we have Perfectionist. Whole cluster fermentation in concrete followed by 18 months of aging in concrete produced a focused, savory wine, with firm refined tannins.  Today, white pepper, cucumber, balsamic reduction, and blueberries are on display.  However, over the next ten years expect the development of leather, slow roasted pork, and earth, with a long elegant tannin structure.  Drink before 2026 with a one to two hour decant, or age through 2042.
